Sweet Chrysanthemum and Goji Jelly

Ingredients
Honeysuckle simple syrup
- 1/4 oz agar agar strips or agar agar powder
- ¼ cup raw cane sugar or an equivalent amount of natural zero-calorie sweetener
- 3 cups water
- 1/2 cup dried chrysanthemum flowers
- 2 tbsp goji
- Mini glass jars or preferred silicon molds
Instructions
- If using agar strips, soak them in cold water for 30 mins. Drain agar strips and put in a large pot with the 3 cups of water. Simmer over low heat for 10-15 mins until agar strips are completely melted. Add in sugar and stir until melted. Add in chrysanthemum and wolfberries. Let simmer another 2-3 mins, stirring occasionally.
- Transfer the liquid into your preferred molds. Make sure each mold contains some chrysanthemum flower and goji. Let it cool in the molds at room temperature for 10 mins or until the jelly just starts to thicken. Use a toothpick to stir up the flower and goji from the bottom of the mold where it has sunk. Repeat every couple of mins until the flowers stay suspended in the jelly. Finish the cooling in the fridge.
- When the jelly is completely set, serve with fresh fruits, coconut milk, or any preferred sweet toppings.
