Post-abortion care risotto

Ingredients:
4 cups of water
1 Chicken leg (optional)
1 cup Arborio rice
¼ cup Chinese rice wine
½ cup cremini mushroom
1/3 cup Chinese yams
1 tsp shredded ginger
Sea salt and pepper
Herbs:
15g Fuling (Poria)
20g Yiren (Coix seeds)
15g Qianshi (Foxnut)
15g Shanyao (Dried Chinese Yam)
15g Lianzi (Lotus seeds)
3-4 jujubes
instructions:
Rinse the herbs and soak for 15 minutes then drain.
Add 4 cups of water into a pot along with herbs and chicken legs into a pot. Bring to a boil on high heat.
Let simmer for 1.5 hrs on low heat, or until approximately 2 cups of water is left. Season with a pinch of salt or to taste.
Drain herbs, shred the chicken, and set broth aside.
Slice mushrooms and Chinese yams diagonally into thin pieces.
Add 1 tsp oil to a pan on low heat. Add in sliced ginger, mushrooms and Chinese yams, season with salt and pepper, and stir-fry for about 10 minutes until tender.
In another saucepan, add 1 tbsp of oil then place in the rice. Cook and stir until rice is coated for 2 minutes.
Add in rice wine and stir constantly until absorbed. Add ¼ cup of broth to rice and stir until fully absorbed.
Repeat until rice is tender yet firm to bite for approx. 15-20mins.
Remove from heat, mix in mushrooms, chicken, and Chinese yams. Top with scallions to finish.
