DC Market’s Collagen Chicken Bone Broth
The Story and Benefits:
DC Market is a family-owned grocery shop in Manhattan’s Chinatown with decades of history. They are known for their high-quality meat and Chinese produce. This past Sunday, I did a community broth tasting event with the shop to help promote their amazing bone broth! The shop gave me their family recipe for collagen-rich chicken bone broth. Bone Broth has amazing nutrients from the marrow in the bones. It is packed with collagen and minerals that can do wonders for your skin and joints! Make sure to cook yours long enough, just like how they do it at DC market, to extract all the benefits from the bones!
Ingredients:
2-2.5 lbs Chicken bones
1 tsp salt
1 medium onion, peeled and halved
2 ribs/sticks of celery (cut into thirds, with leaves attached)
2 medium carrots, peeled and halved
2 smashed garlic cloves
Water (stockpot: 16 cups, 6 Qt Slow Cooker: 12 cups, Pressure Cooker: 10-11 cups)
Methods:
Combine ingredients in a pot and cook. For Stovetop method, let water come to a boil and simmer for 15 hours of slow cooking. For the slow cooker method, set for 15 hours on low heat. For the pressure cooker method, after water comes to pressure, cook for 2 hours. Wait 30 minutes for natural depressurization then release.
Make it Seasonal and Herbal:
At DC, we added lotus seed, coix seed, and lily bulb to the broth for a special seasonal broth for the summer to cool heat and calm the spirit! You can simply add 1 cup of each to the soup and cook together with the bones!
