Morel Mushroom Salad with Za’taar Dressing

This salad fuses different cultures and flavors to make a delicious side. The addition of Za'atar and olives give this dish a Middle Eastern-inspired feel and the mushrooms and sesame oil are Asian-inspired. The combination of flavors, the various textures, and bright colors of this dish make it an irresistible side to any main dish.
Ingredients
- 2 tablespoons sesame oil
- 6 dried* or fresh morel mushrooms
- 6 white asparagus stems
- salt and pepper, to taste
- 3/4 tablespoon Za'atar
- 3 tablespoons fresh lemon juice
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 15 leaves of mixed radicchio and butterhead lettuce
- 7 kalamata olives
Note
- *soaked 15 minutes or overnight
Instructions
- Heat sesame oil in pan. Add morel mushrooms and asparagus. Sauté until asparagus are slightly browned, about 5 minutes. Season with salt and pepper to taste.
- In a jar, mix Za'atar, lemon juice, olive oil, salt, and pepper. Shake the jar until dressing is emulsified. Adjust with seasonings if needed.
- Massage the radicchio and butterhead lettuce with dressing.
- Add olives, morel mushrooms, and asparagus. Toss and enjoy.
